Green Bean and Shoepeg Corn Casserole

Several requests for Jan's modified green bean & corn casserole, one
from
someone who wasn't at either MoFest. This stuff is gooood!


Layer each of the following in order, in a greased 13x9 cake pan:

1-1/2 cups crushed Ritz Crackers
2  14oz cans French style green beans, drained
1  14oz can Shoe-peg (sp?) corn
1  can water chestnuts, sliced
1  small onion, chopped fine

Then, mix 1 14oz can cream of celery soup with 8 oz of sour cream
and layer on top of the onions.

1  cup shredded cheddar cheese (I prefer extra sharp)
1-1/2 cups crushed Ritz Crackers
1  stick of melted butter

pre-heat oven to 350 and bake for 30-35 minutes.

GREEN  BEAN  CASSEROLE
1 c. French green beans, drain
1 c. shoepeg corn, drained
1 c. water chestnuts
1 sm. onion, chopped
1 (8 oz.) sour cream
1 c. Cheddar cheese
1 c. cream of celery soup
3 or 4 slices bacon, fried
1 Ritz cracker (sleeve)
1 stick butter

  Use 13 x 9 inch casserole dish.  Layer:  green beans, corn, onions,
chestnuts.  Mix soup and sour cream together.  Then layer on top of
chestnuts, layer cheese, layer bacon.  Melt butter in pan.  Crumble crackers
in butter.  Sprinkle on the top layer.  Bake at 250 degrees for 45 minutes
or
until it bubbles.

            1 md Onion, cut into 1/4" slices 
            1 tb Vegetable oil 
           16 oz Bush's BBQ Baked Beans* 
           10 oz Frozen whole kernal corn 
          1/2 ts Tobasco sauce or to taste 
        
        In a saucepan, saute onion in oil till tender.  Add undrained beans and 
        corn.  Bring to a boil. Reduce heat and simmer for five minutes or until 
        heated through.  Stir in Tobasco or your choice of pepper sauce. 
        
        NOTE: For more of a Southwest taste, substitute a 16 ounce can of Bush's 
        Bold & Spicy Baked Beans which contains chili pepper, cumin and cilantro. 
        
        YIELD: 4 SERVINGS

Shoepeg Corn Casserole

  1                can  Shoepeg Corn -- drained
  1                can  Cream of Mushroom -- or celery
  1                can  French Style Green Beans -- drained
  1                cup  Celery -- diced
  1                cup  Sharp Cheddar Cheese -- grated
  1                cup  Sour Cream

Mix all ingredients together (a large bowl is recommended!)  Place in a casserole dish
and bake on 350 for about 30 minutes.  I usually put a Ritz Cracker/butter topping and
put back in oven till that's brown.  My Mom puts diced onions in when she makes it.
